Classic Crepes

  1. In a medium bowl, whisk together the eggs, milk, water and salt.
  2. Whisk in flour.
  3. Melt the butter in a skillet or crepe pan and add to the batter.
  4. Heat skillet/crepe pan over medium heat. Pour ¼ cup of batter into the pan. A measuring cup works well for scooping batter. Cook for 30 seconds or so on each side.
  5. Serve right away or cool for use later. They can be refrigerated or frozen for later use.
Chef’s Narrative
This thin French-style pancake is extremely versatile and can be filled with a sweet or savory fillings. The simplest and classic way is rolled with powdered sugar on top. A squeeze of lemon is also very good.
