Garlic Mashed Potatoes

Directions
  1. Place potatoes in medium stock pot and cover with cold water and ½ teaspoon of the salt.
  2. Place on medium/high heat and bring to rolling boil. Cook for about 8-10 minutes, until potatoes are tender enough to spear with a fork or knife. Turn off heat.
  3. In small sauté pan, melt butter over medium heat.
  4. Add garlic and herbs and sauté for 2 minutes, remove from heat.
  5. Reserve 1 cup of potato cooking water. Drain potatoes and put back into the pot
  6. Add butter, remaining 1 teaspoon of the salt, and 1 ½ cups (12 oz) of whole milk and mash with a potato masher or hand mixer until smooth and creamy, do not over-process. If more moisture is needed, add the reserved potato water in small amounts to attain the consistency you prefer.
  7. Add garlic and herb mixture, stir until well incorporated.
