Green Muffins

Directions
  1. Preheat oven to 350°F. Spray a muffin tin with non-stick cooking spray.
  2. In a blender or food processor, combine all ingredients and blend until well combined and smooth in consistency.
  3. Portion muffin batter evenly in prepared muffin tin, filling each muffin hole about ¾ of the way full with batter.
  4. Bake for 20-23 minutes, or until a toothpick inserted in the middle of each muffin comes out clean.
