Directions
Peel 3 strips of zest from the orange. Slice the remaining fruit, reserving 3-4 slices for garnish. Set aside.
Toast the spices over medium-low heat for 1-2 minutes, until just aromatic.

In a small piece of cheesecloth, place the spices and tie shut.
In a medium saucepan, place the orange peel, orange slices, vanilla bean, spice pouch, maple syrup and wine.
Place on burner over medium-low heat. Do NOT boil. If it starts to simmer, reduce heat to low.

Strain out orange peels, vanilla bean (if using) and spice pouch.
Serve warm with a slice of the reserved orange slice and a fresh cinnamon stick.
