Pear Conserve with Ginger

Directions
  1. Measure the pears, sugars, zest, lemon juice, and both gingers into a heavy saucepan.
  2. Over medium-high heat, bring the mixture to a boil. Lower the heat to a gentle simmer and cook, stirring from time to time for about 30 minutes or until the mixture is thickened.
  3. Cool, cover and refrigerate. Keeps for 2 weeks.
Chef’s Narrative
Great with crackers, toast and muffins. A nice complement to cheeses or alongside smoky grilled pork chops or roasted ham.
Recipe Substitutions
We leave the skin on yellow varieties of pears for their color.
