Sushi Rice and Roll and Tuna Salad and Avocado Wrap

Directions
Sushi Rice Directions
  1. Rinse rice well and drain.
  2. Add water and rice to a saucepan and bring to a boil. Cover and reduce heat to a simmer. Cook rice for about 20 minutes or until all liquid is absorbed.
  3. While rice is cooking, add vinegar, sugar, and salt into a separate small saucepan. Heat on medium-low heat and stir constantly until salt and sugar dissolve.
  4. In a wide shallow glass bowl, add hot rice and vinegar mixture. Mix together until the rice is well-coated.
Sushi Roll Directions
  1. On a sushi mat (No mat no worries! Use a kitchen towel lined with plastic wrap, or a silicon mat lined with plastic wrap, both do the trick!), lay out nori sheet. Add a thin layer of sushi rice (~1 cup for full sized nori sheet or ½ cup for half sized nori sheet) onto nori and lightly press with fingers.
  2. Along one edge of rice, lay sushi fillings snugly. Be careful not to let fillings hang over the edge.
  3. Start to roll using the sushi mat from the side with the toppings. Roll tightly and then seal edge using a damp finger.
  4. Slice and eat!
Tuna Salad
  1. Add all ingredients to a bowl, except avocado slices, break tuna up with a fork and stir until well combined.
  2. When ready to eat, slice ½ of an avocado, place 2 spoons full of salad mixture in center of each wrap and spread. Then place several slices of avocado over mixture.
  3. Fold bottom half of tortilla ⅓ way up to prevent mixture from falling out of bottom when eating, then roll tightly.

Sushi Roll Substitutions: You can also make a cone shape, just fill, roll the nori into a cone, and seal. Tuna Salad Substitutions: You can customize your tuna salad by adding fresh diced onions, celery, grapes, dried cranberries, and/or nuts or seeds like walnuts or sunflower seeds.

  • 15 ounce cantuna packed in water, drained
  • 2 small or 1 large pickle, chopped

  • Salt and pepper, a couple shakes each

  • 26″ whole grain tortilla
