Cherry Clafouti

Ingredients

  • 1 cup pitted, fresh cherries, sliced in half
  • 1/2 teaspoon almond extract
  • 1 tablespoon Lulubelle's™ Creamery butter, for pan
Batter:
  • 1/2 teaspoon all-purpose flour
  • 3 tablespoons granulated sugar
  • 1/4 teaspoon kosher salt
  • 1 cup Lulubelle's™ Creamery whole milk,
  • 2 large Gwendolyn's™ Organic eggs
  • 2 tablespoons Lulubelle's™ Creamery butter, melted
  • 1 teaspoon vanilla extract

  1. Preheat oven to 375ºF
  2. Place cherries in a small bowl, add almond extract and mix to combine. Set aside while you prepare pan and batter.
  3. Place 1 tablespoon butter in a 12-inch oven proof skillet, place skillet in oven for butter to melt while preparing batter.
  4. Put all remaining ingredients in a blender. Blend on high until completely mixed.
  5. Remove hot skillet from oven and swirl the melted butter to coat bottom and sides. Pour batter into hot, buttered skillet. Sprinkle cherries on top of batter. Return skillet to oven.
  6. Bake for 25-30 minutes or until edges are browned and middle is set.
  7. Eat warm or at room temperature. There won’t be any leftovers.
