Heritage Apple and Wild Huckleberry Cobbler

Ingredients

Filling
  • 1/3 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 cups sliced peeled tart heritage apples about 4 large apples
  • 1/2 cup wild hucklberries
  • 1/3 cup fresh squeeze orange juice no additives or sugar
Topping
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons cold butter
  • 2 tablespoons fresh apple puree steamed apple slices, pureed, or sub unsweetened apple sause
  • 1 tablespoon coarse Turbinado sugar crystals
  • 1/2 cup Lulubelle's Creamery fat-free milk

  1. Preheat oven to 375°
  2. In a large bowl, combine the 1/3 cup sugar, cornstarch, cinnamon and nutmeg. Add apples, huckleberries and orange juice; toss to coat. Transfer to an 11-in. x 7-in. baking dish.
  3. For topping, combine the flour, 1/4 cup sugar, baking powder and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in apple puree and milk just until moistened. Assemble large spoonfuls of topping evenly onto the apple mixture. Sprinkle the top evenly with the sugar crystals.
  4. Bake for 30-35 minutes, or until a toothpick inserted into topping comes out clean.
