Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup Lulubelle's™ Creamery butter, room temperature
- 1 Gwendolyn's™ Organic egg
- 1 cup buttermilk, low fat
- 1 1/2 cups brown sugar, loose pack
- 1 cup applesauce
- 1 teaspoon vanilla
- 1 1/2 cups fresh rhubarb, chopped

- Rhubarb is a great calcium plant-based source, meeting about 9% of your daily needs with a 3.5 oz serving.
- A good source of fiber, rhubarb helps support regularity and digestive health.
- Preheat oven to 350°F
- Grease a 9 x13 inch pan
- Sift together the flour, soda and salt in a bowl.
- On medium speed, cream butter and sugar together in a stand mixer with the paddle attachment, or with a hand mixer, until smooth.
- Beat in the egg followed by the buttermilk.
- Add the flour mixture to the butter mixture mixing briefly until just smooth. Stir in the applesauce and vanilla. Fold in the chopped rhubarb.
- Pour into prepared pan and bake for 1 hour or until a toothpick, when inserted, comes away clean.
