Ingredients
- 2 pounds salmon fillet, boned with skin on
- 1 large bunch dill, thick stems removed, about 1 cup
- 1 bunch green onions, root ends trimmed, chopped, about 1 cup
- 1 clove garlic, peeled and chopped
- ¾ cup olive oil
- juice of 1 lemon
- 1 ½ tablespoons sugar
- 2 tablespoons Dijon mustard
- ½ teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon ground coriander
- Preheat oven to 350˚F.
- Pulse dill, green onions and garlic in a food processor or blender until well blended. Add olive oil, lemon juice, sugar, mustard, salt, pepper and coriander and blend until pureed.
- Place salmon on a foil-covered baking sheet skin side down. Spread 1/2 of sauce over salmon reserving 1/2 of the sauce for serving with the baked fish.
- Bake to an internal temperature of 145˚F, depending on the thickness of the fish this will take from 15 to 20 minutes.
