Beer Braised Bratwurst

Ingredients

  • 2 teaspoons neutral oil, divided
  • 6 6oz Silver Sage Farms Bratwurst
  • 2 cups thinly sliced yellow onion
  • 1 cup chopped fennel root
  • ½ teaspoon kosher salt
  • 1 teaspoon whole mustard seed
  • 16 ounces German style Pilsner
  • 1 tablespoon chopped fresh dill (optional)
  • 1 tablespoon chopped fennel fronds (optional)

  1. Add 1 teaspoon of the oil to a 12-inch skillet over medium high heat. Put the brats in the hot pan and cook until browned, turning occasionally. About 5 minutes. Remove the brats and set aside.
  2. Add the additional teaspoon of oil to the skillet followed by the onion and fennel root. Sauté until soft and lightly caramelized.
  3. Sprinkle the salt and mustard seed over the onion and fennel. Stir briefly then return the brats to the skillet with any accumulated juices.
  4. Add the beer and bring to a low simmer. Cover the skillet and cook until the brats reach an internal temperature of 165 degrees Fahrenheit, about 10 minutes.
  5. Sprinkle fresh dill and fennel fronds over sausages if desired.
