Chili con Carne

Ingredients

  • 1 pound Silver Sage Farms™ ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green pepper, diced
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons ancho chili powder
  • 2 teaspoons ground cumin
  • 3/4 teaspoon ground coriander
  • 2 teaspoons smoked paprika
  • 1/4 cup cocoa powder
  • 1 15-ounch can tomato sauce
  • 1 15-ounch can diced fire roasted tomatoes
  • 3 cups cooked black beans, or 2, 15-ounce cans black beans, rinsed and drained
  • 1 teaspoon sugar
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1/2 cup beef broth
  • 2 tablespoons red wine vinegar

  • Tomatoes are excellent sources of vitamin C and a potent antioxidant called lycopene.
  • Just a ½ cup of black beans provides 7 grams of plant-based protein and over 8 grams of fiber!

  1. Brown ground beef in a large pot or Dutch oven over medium heat.
  2. Add onion and garlic and cook until onion is soft. Add bell pepper and cook stirring frequently for two minutes.
  3. Stir in cayenne, ancho chile powder, cumin, coriander, paprika and cocoa powder.
  4. Add tomato sauce, diced tomatoes and black beans.
  5. Add sugar, salt and black pepper.
  6. Bring to a simmer and cook for 5 minutes, add beef broth and red wine vinegar. Stir well and bring to a simmer, cover and cook for 25 minutes, stirring occasionally.
  7. Garnish with your favorite toppings, such as grated cheese, sour cream, and chopped scallions.
