Ingredients
- 8 ounces firm tofu
- 1/3 cup vegan mayonnaise
- 1 teaspoon mustard
- 1 teaspoon nutritional yeast
- ½ teaspoon turmeric powder
- 1/8 teaspoon dried chile powder
- ¼ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup diced red onion
- 1/8 cup diced dill pickles
- 1 tablespoon chopped parsley
Nutritional Information
- Tofu is an excellent source of plant-based protein, providing ~10 grams protein per ½ cup or 4 ounces.
- Soy is considered a complete protein source, since it contains all 9 essential amino acids to support normal growth and development.
- Pat tofu with paper towels to remove excess moisture.
- Cut into 4 equal pieces and place in a large bowl.
- Mash up tofu with a fork until it resembles scrambled eggs.
- Stir in vegan mayonnaise and mustard.
- Mix in spices.
- Fold in onions, pickles and parsley and mix thoroughly.
