Eggless Egg Salad

Ingredients

  • 8 ounces firm tofu
  • 1/3 cup vegan mayonnaise
  • 1 teaspoon mustard
  • 1 teaspoon nutritional yeast
  • ½ teaspoon turmeric powder
  • 1/8 teaspoon dried chile powder
  • ¼ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup diced red onion
  • 1/8 cup diced dill pickles
  • 1 tablespoon chopped parsley

Nutritional Information

  • Tofu is an excellent source of plant-based protein, providing ~10 grams protein per ½ cup or 4 ounces.
  • Soy is considered a complete protein source, since it contains all 9 essential amino acids to support normal growth and development.

  1. Pat tofu with paper towels to remove excess moisture.
  2. Cut into 4 equal pieces and place in a large bowl.
  3. Mash up tofu with a fork until it resembles scrambled eggs.
  4. Stir in vegan mayonnaise and mustard.
  5. Mix in spices.
  6. Fold in onions, pickles and parsley and mix thoroughly.
