- 3 cups peeled, grated russet potatoes (about 2 pounds of potatoes)
- 2 Gwendolyn's™ Organic eggs, beaten
- 4 tablespoons Lulubelle's™ Creamery unsalted butter (melted)
- ½ teaspoon baking powder
- 2 teaspoons salt
- ½ teaspoon black pepper
Nutritional Information
- Potatoes are an excellent source of potassium, a mineral that helps regulate blood pressure.
- Potatoes contain resistant starch, a type of starch that promotes gut health.
- Preheat oven to 400°F. Grease a 12-cup muffin tin.
- Place grated potatoes in a large bowl.
- Add remaining ingredients.
- Fill muffin tins with ¼ cup of potato mixture.
- Bake 45 minutes or until brown and crispy.
