Cinnamon Cranberry Peanut Butter Bites

Ingredients

  • ¾ cup 100% ground peanut butter (or other nut butter)
  • ¼ cup honey (replace with maple syrup for vegan version)
  • ½ teaspoon vanilla extract
  • 1 ½ cup rolled oats (gluten free if preferred)
  • ½ cup dried cranberries
  • 2 teaspoons chia seeds
  • ¼ teaspoon ground cinnamon

  1. Place peanut butter, honey, and vanilla extract in medium microwave safe bowl and place in microwave for 30-45 seconds to warm for easy mixing.
  2. Add all other ingredients to mixture and stir with spatula until all ingredients are well combined.
  3. Using a small cookie scoop or dinner spoon, scoop mixture and roll into bite size balls.
  4. Eat immediately, store in refrigerator for a few weeks, or freeze for up to several months.
