Ingredients
- 2 pounds pears peeled, cored, and cut into 1/4-inch dice
- 1 1/3 cups white sugar
- 1/3 cup dark brown sugar
- 1/2 teaspoon lemon zest
- 2 tablespoons lemon juice
- 2 tablespoons finely chopped crystallized ginger
- 1 tablespoon minced fresh ginger
- Measure the pears, sugars, zest, lemon juice, and both gingers into a heavy saucepan.
- Over medium-high heat, bring the mixture to a boil. Lower the heat to a gentle simmer and cook, stirring from time to time for about 30 minutes or until the mixture is thickened.
- Cool, cover and refrigerate. Keeps for 2 weeks.

Great with crackers, toast and muffins. A nice complement to cheeses or alongside smoky grilled pork chops or roasted ham.

We leave the skin on yellow varieties of pears for their color.
