Raw Cranberry Orange Relish and Cranberry Sauce with Pear & Ginger

Ingredients

Raw Cranberry Orange Relish
  • ½ cup pitted dates
  • 2 cups fresh, raw cranberries
  • 2 Granny Smith apples, peeled, cored and cut into thick slices
  • Juice and zest of one large orange
Cranberry Sauce with Pear & Ginger
  • 4 cups fresh or frozen cranberries
  • 2 cups sugar or water
  • 1 cup orange juice
  • 1 tablespoon finely grated lemon zest
  • 1 tablespoon peeled, finely diced fresh ginger root
  • 2 slightly underripe pears, peeled, cored and diced

Raw Cranberry Orange Relish
  1. Place dates in a small heat-safe bowl and cover with boiling water. Allow to rest 15 minutes to soften.
  2. Drain dates and place in food processor along with cranberries, apples, orange zest, and juice.
  3. Drain dates and place in food processor along with cranberries, apples, orange zest, and juice.
  4. Chill until ready to serve. May be stored in the refrigerator in an air-tight container for use within 3 days.
Cranberry Sauce with Pear & Ginger
  1. Place all ingredients in a saucepan. Bring to a boil, reduce to a simmer and cook just until the cranberries pop and start to soften, about 15 minutes. Remove from heat and let cool. Sauce will thicken as it cools.
