Rhubarb Applesauce Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Lulubelle's™ Creamery butter, room temperature
  • 1 Gwendolyn's™ Organic egg
  • 1 cup buttermilk, low fat
  • 1 1/2 cups brown sugar, loose pack
  • 1 cup applesauce
  • 1 teaspoon vanilla
  • 1 1/2 cups fresh rhubarb, chopped

  1. Preheat oven to 350°F
  2. Grease a 9 x13 inch pan
  3. Sift together the flour, soda and salt in a bowl.
  4. On medium speed, cream butter and sugar together in a stand mixer with the paddle attachment, or with a hand mixer, until smooth.
  5. Beat in the egg followed by the buttermilk.
  6. Add the flour mixture to the butter mixture mixing briefly until just smooth. Stir in the applesauce and vanilla. Fold in the chopped rhubarb.
  7. Pour into prepared pan and bake for 1 hour or until a toothpick, when inserted, comes away clean.
