- 1 tablespoon lemon juice
- 2 tablespoons maple syrup
- 1/4 cup olive oil
Tandoori Style Roasted Chicken
- 4 organic chicken breasts , split bone-in, skin on
- 2 1/2 teaspoons garam masala
- 1/2 teaspoon salt
- 1/2 teaspoon ground coriander
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 2 teaspoons ginger, minced
- 1 tablespoon fresh lime juice
- 3 tablespoons plain Greek yogurt
- 1/4 cup olive oil
Mexican Style Roasted Chicken
- 4 organic chicken breasts , split bone-in, skin on
- 3 teaspoons ground cumin
- 1 teaspoon salt
- 1 teaspoon dried oregano leaves
- 1 teaspoon garlic powder
- 1/2 teaspoon chipotle powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground black pepper
- 2 cloves garlic, minced
- 2 tablespoons lime juice
- 1/4 cup olive oil

- Preheat oven to 475°F
- Measure all ingredients for your favorite spice combination into a large bowl. Mix or whisk to combine.
- Place chicken pieces in mixture and coat well.
- Place chicken on foil or parchment lined sheet pan, using a sharp knife make 3 diagonal slits in each chicken breast and pour remaining mixture over chicken and rub into slits.
- Cook for ~25 minutes or until internal temperature reaches 165°F, let rest for 10 minutes and enjoy!
