Three Cheese Fondue

Ingredients

  • 6 ounces Lulubelle's Cheddar Cheese, grated, about 2 cups
  • 5 ounces Havarti Cheese, grated, about 1 ¼ cups
  • 5 ounces Brindisi or Fontina Cheese, grated, about 1 ½ cups
  • 2 tablespoons cornstarch
  • 1 cup white wine, forward fruit
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • teaspoon nutmeg

  1. Place all the cheeses in a bowl and add the cornstarch. Toss to combine evenly, set aside.
  2. In a heavy saucepan, bring the wine, lemon juice, and garlic to a simmer over medium-low heat. Add the cheese mixture slowly to the simmering liquid, stirring well between each addition to ensure a smooth fondue. Once melted and smooth, stir in the nutmeg.
  3. Serve right away or keep warm over low heat.

Pair with assorted dippers like cubed bread, boiled new potatoes, sliced radishes, asparagus, lightly steamed broccoli or cauliflower florets, cherry tomatoes, apples and pears. Sliced sausages are delicious too!

Recipe Substitutions

Swiss cheese, Gruyere and Manchego may be substituted for the Brindisi cheese.
