White Turkey Chili

Ingredients

  • 2 teaspoons olive oil
  • 1 medium onion chopped, about 2 cups (reserve ¼ cup for garnish)
  • 4 cloves garlic finely chopped or 1 teaspoon garlic powder
  • 1 pound lean ground turkey
  • 32 ounces chicken broth (4 cups)
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 15-oz cans Great Northern Beans low sodium, drained and rinsed
  • 16 ounces salsa verde
  • ½ cup cilantro leaves

  1. In large pot over medium heat sauté onions in olive oil until soft.
  2. Add chopped garlic and sauté for a few more minutes.
  3. Add ground turkey and cook until no pink remains.
  4. Add chicken broth, salt, pepper, beans, and salsa verde.
  5. Simmer on medium-low heat for about an hour, until liquid reduces and chili slightly thickens.
  6. Top with fresh cilantro and chopped onion.
